During a renovation the first step is definitely to restore the roof, if it cannot be restored, it will have to be redone.

Here are photos of a roof just completed in a farmhouse in the province of Asti. I attach photos of the roof before the work and of the redone roof: 340 square meters of roof demolished and redone in about 4 months of work.
